Homemade Roasted Pumpkin Seeds

No reason to throw out those perfectly good seeds after carving your Halloween pumpkin. Follow these easy steps to create a healthy, and easy snack.

1 Heat oven to 350°F. Remove the membrane and seeds. Remove most of the pulp from the seeds (leave some pulp on – it adds to the flavor; for the same reason, do not rinse the seeds).

2 Spread seeds in a shallow, cookie sheet pan. Spray seeds with cooking spray; sprinkle with salt. You can add other seasonings as you like: chili pepper for a spicy treat, or cinnamon for a sweet treat.

3 Bake 25 to 30 minutes or until browned; rotate half way, cool.
